Triple Berry Smoothie Bowl

Serves 2 – 4

This two-step recipe is a great and simple way of using up leftover fruit from your fridge!

Ingredients

  • 3 bananas – chopped into small chunks and frozen
  • 1 handful of raspberries – frozen
  • 1 handful of blueberries – frozen
  • 250ml of milk (or a plant-based milk of your choice)
  • Juice of ½ lemon
  • 1tbsp honey (or a sweetener of your choice)
  • 1 handful goji berries
  • 1 handful flaked almonds (optional)
  • 1 handful chia seeds (optional)
  • Keep some fresh berries to one side for the topping

Method

  1. In a food processor or blender place all your chopped frozen fruit, lemon juice and honey and blitz. Slowly add the milk until you have a nice smooth, thick consistency. You may need to scrape down the sides of your blender a few times in between blitzing to make sure all the lumps are gone.
  2. Spoon your smoothie mixture in a bowl. Top with goji berries, chia seeds, nuts, fruit or any toppings you fancy – coconut flakes are a great addition too, and serve!

Chop up your fruit and pop it in the freezer the night before. This will make your smoothie bowl lovely and thick.
